We all know that the mushroom was invited to the party because he was a FUNGI but do you know why the fungus had to leave the party?…Because there wasn’t MUSHROOM! Fall can be a great time to get outside in the beauty of creation and not only see the fall colors but also find some amazing edible mushrooms. Here are 2 of our favorites.
Elm Oysters

October is not too late to collect these end-of-season delicious “elm oyster” mushrooms! They regularly grow in the knot holes of boxelders (and elms) and are easily identifiable by their curving stem, gills, and white flesh. They can be stir fried for your favorite dishes or even dehydrated and added to winter salads.
Giant Puffball

October means also means giant puffballs! They are easy to ID and fun to eat. I have even seen children stacking them to make a puffball snowman! When they are fleshy and white you can slice them up and sauté them in oil or butter with your favorite seasonings.
Better yet try PUFFBALL PIZZA! You can make a nice crust for your pizza by baking the sliced puffball in the oven for 15 minutes on each side before putting on your sauce and toppings. Don’t expect a crispy crust like a traditional thin crust pizza but the flavor is mild and the texture is nice. Enjoy!
